Franklin's Original New York Cheesecake

The cheesecake everything else started with. Our original New York-style baked cheesecake is rich, dense and creamy, with a clean vanilla finish and our classic cookie crust.

We spent around four years developing this recipe, including testing how the flavour changed after 12, 24 and 48 hours of resting. Forty-eight hours won — and we still won't sell one before it has had that time.

The whole cake: 9-inch, approximately 5lb, generously serves 12–16. Slow-baked, gently cooled and rested for a full 48 hours.
